What You Need

200g, crumbled
Use authentic Greek feta in brine. Pre-crumbled feta is too dry and lacks flavour.

Large handful, torn
Tear the leaves by hand β€” never chop mint with a knife as it bruises and darkens.

Soak in cold water 10 min to mellow the sharpness while keeping the crunch.

Persian Cucumber
2, sliced into half-moons
Adds crunch and freshness. English cucumber works too, just remove seeds.

2 cups, loosely packed
The peppery bitterness balances the sweet melon perfectly.
The Steps

How to Assemble

Chill everything

Cold watermelon is non-negotiable. Refrigerate for at least 2 hours before cutting. A warm watermelon salad is a sad watermelon salad.

Soak the onion

Submerge red onion slices in cold water for 10 minutes. This removes harshness while keeping colour and bite. Drain and pat dry before using.

Layer the base

Spread arugula on a wide, flat serving platter. This acts as both garnish and texture base. Scatter cucumber slices and onion over it.

Add the melon

Arrange watermelon cubes on top. Do not toss β€” arrange gently so the cubes remain intact and don't release all their juice prematurely.

Finish & dress

Crumble feta generously over everything. Scatter torn mint leaves. Drizzle with dressing just before serving and add flaky sea salt and black pepper.

Serve immediately
